Teeth of the cat cheese

I am thinkig this might actually be called Cat's tooth .


I love to try different cheeses. We have a fantastic supermarket, like a french version of Whole Foods that has all kinds of cheese to try. Often they have a sale on some kind of odd cheese, I always buy that...I saw this..."teeth of the cat" and I thought...I need to try that ( I will have to make a spreadsheet.) I asked the butcher about this cheese...it is a french thing, I had a feeling. The butcher told me it is for babies and small children, very mild.

Rune and I both liked it.



 Dent du Chat (also called Meule de Savoie) is a raw, whole cow's milk cheese with a cooked, pressed, washed rind. It is produced by the Coopérative Laitière de Yenne, located in the commune of Yenne in the Savoie department in the Auvergne-Rhône-Alpes region.


It comes in the form of a wheel 50 centimeters in diameter and 15 centimeters high. Each wheel weighs between 35 and 45 kilograms.


Its rind, which ranges from straw-colored to dark golden, is thin.


Its interior, which varies in color from light to bright yellow depending on the production period, is dense. It is a blind cheese with a very fine texture, both firm and melting.


On the nose, Dent du Chat offers a light aroma of fresh grass or straw.


On the palate, it is a mild and delicate cheese with a fruity flavor. It is similar to Gruyère.


Generally aged for at least 5 to 6 months, Dent du Chat is also marketed after a longer aging period of 10 to 12 months, reserved exclusively for cheeses made during the grazing season from April to October. Its texture will then be bright yellow and more aromatic.


This cheese is perfect for use in traditional Savoyard fondue.
